Julie Miller Jones, PhD, LN, CNS, St. Catherine’s University, was interviewed by Phil Lempert, The Supermarket Guru, at the 2019 Potato Expo where she presented on the nutritional benefits of potatoes and their important place in the diet. She specifically notes that potatoes are abundant in potassium, vitamin B6, antioxidants and magnesium, and stresses that potatoes can be a vehicle to get more vegetables in the diet.
